  • 2 pork tenderloins (cut into 4-inch pieces)
  • 1 package corn husks
  • 2 tablespoons coarse ground black pepper
  • 2 tablespoons ground cumin
  • 1 tablespoon kosher salt
  • 1 tablespoon marjoram
  • 1 tablespoon brown sugar
  • 2 teaspoons sweet paprika
  • 2 teaspoons garlic powder
  • 2 tablespoons olive oil
  • 4 Honey crisp apples (medium, peeled, cored and cut into 1-inch squares)
  • 2 tablespoons jalapeño (pickled, minced)
  • 1 white onion (small, diced, about ¼ cup)
  • 2/3 cup hot pepper jelly
  • 1/2 cup apple cider
  • 1/2 cup brown sugar (packed)
  • 1/4 cup champagne vinegar
  • 2 teaspoons fresh ginger (grated)
  • 1 teaspoon all spice
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves

    Directions

    1. Combine all rub ingredients in small bowl. Set aside.
    2. Heat olive oil in large skillet. Add apples, jalapeño and onion. Sauté 3-4 minutes over medium heat. Add remaining ingredients and simmer 15-20 minutes until thickened. Remove from heat and set aside until ready to use. Can be made 1 day ahead.
    3. Place one package of corn husks in a large bowl with water; place another bowl filled with water on top of the husks to keep them submerged for 30 minutes. Select the largest husks from the water and lay them on a towel; blot them dry.
