Pork tenderloin is a great alternative to chicken or steak, it provides a good amount of protein and works with a variety of flavors. In this recipe the pork is paired with a red bell pepper sauce. The vibrantly colored sauce is super simple to make, requiring just a few ingredients to make. The sauce is very versatile, you can use it with pretty much any protein from beef to fish, use it as a light but bold salad dressing, or drizzle it over a bowl of hummus for some extra flavor.

Ingredients

  • 1 red bell pepper
  • olive oil
  • salt
  • 1 teaspoon sugar
  • 1 pork tenderloin
  • chives

Directions

  1. Preheat the oven to 170 degrees Celsius.
  2. Drizzle the bell pepper with olive oil. Place it on a baking sheet and roast for 1 hour, turning every 15 minutes.
  3. Remove the bell pepper from the oven and peel and seed it.
  4. Add the pepper with the sugar to a food processor. Puree until smooth.
  5. Add a tablespoon of olive oil to a skillet heated on medium heat. Sear the tenderloin on all sides, about 15 minutes. Allow the tenderloin to rest and cut into 1-inch slices. Pour the pepper sauce on top and serve.

The red bell pepper sauce contained in this recipe is so good. I will be using it on many different dishes beyond this pork tenderloin.
