Ingredients

  • 1 1/2 pounds pork tenderloin
  • 1/2 cup olive oil
  • 1/4 bunch fresh cilantro (chopped)
  • 3 tablespoons lime juice
  • freshly ground black pepper
  • 12 cloves garlic (peeled)
  • 1/4 cup olive oil
  • 2 cups cooked rice
  • 1 teaspoon ginger (grated)
  • 1/4 cup green onions (chopped)
  • 1 clove garlic (minced and sauteed)
  • 1/2 cup cashew nuts
  • 1/2 cup butter
  • 1/4 cup cilantro (chopped)
  • 2 tablespoons garlic (roasted and minced)
  • 2 tablespoons lime juice

Directions

  1. Cut tenderloins crosswise into 1-inch pieces, flatten slightly. Combine next five ingredients; marinate pork in mixture four hours, refrigerated. Remove pork from marinade; panbroil in heavy skillet over medium-high heat 2-3 minutes per side. Serve atop Cashew Rice; top each serving with 1 teaspoon of Garlic-Cilantro Butter.
