Ingredients

1 1/2 pounds pork tenderloin
1/2 cup olive oil
1/4 bunch fresh cilantro (chopped)
3 tablespoons lime juice
freshly ground black pepper
12 cloves garlic (peeled)
1/4 cup olive oil
2 cups cooked rice
1 teaspoon ginger (grated)
1/4 cup green onions (chopped)
1 clove garlic (minced and sauteed)
1/2 cup cashew nuts
1/2 cup butter
1/4 cup cilantro (chopped)
2 tablespoons garlic (roasted and minced)
2 tablespoons lime juice

Directions

1Cut tenderloins crosswise into 1-inch pieces, flatten slightly. Combine next five ingredients; marinate pork in mixture four hours, refrigerated. Remove pork from marinade; panbroil in heavy skillet over medium-high heat 2-3 minutes per side. Serve atop Cashew Rice; top each serving with 1 teaspoon of Garlic-Cilantro Butter.
