  • 1 tablespoon oil
  • 1 2/3 pounds pork tenderloin (cut into 1 inch thick medallions)
  • 1/2 cup vegetable stock
  • 3 1/2 ounces gorgonzola cheese (crumbled)
  • 6 apricots (pitted and cut into wedges)
  • 3 1/2 ounces arugula
  • baguette (sliced, to serve)

Directions

  1. Preheat oven to 325°F. Heat oil in a frying pan and sear pork over high heat for 2 mins. Transfer to an ovenproof serving dish and add stock. Top each medallion with cheese and apricot wedges. Season and bake for 15-20 mins, until pork is cooked through. Sprinkle with arugula and serve with sliced baguette.
