Ingredients

  • 2 pounds pork tenderloin
  • salt
  • pepper
  • 4 tablespoons butter
  • 2 teaspoons thyme (diced)
  • 9 ounces apricot preserves
  • 2 tablespoons honey
  • 1 tablespoon dry mustard
  • garlic powder (to taste)
  • 2 tablespoons dry sherry

Directions

  1. 1Preheat oven to 350 degrees.
  2. 2Spread butter on meat; sprinkle with salt and pepper and thyme.
  3. 3Bake 30-40 minutes.
  4. 4Make apricot sauce.
  5. 5Return to oven and continue baking for 15 minutes more, basting with remaining sauce.
  6. 6Do not overcook.
  7. 7Yield: 6-8 servings.
