- fennel fronds (as needed)
- 1 shallots (minced)
- 1 clove garlic (minced)

- 12 boneless center cut pork chops (culatello ham, pounded ¼-inch thick)
- 3 qt. fresh breadcrumbs
- 1/2 bunch parsley (chopped)
- 1/2 bunch basil (chopped)
- 1/2 bunch mint (chopped)
- 3 cups all-purpose flour (3 cups a.p.)
- 5 eggs (beaten)
