The stuff that Sunday suppers are made of, this milk-braised pork loin requires no expensive ingredients or complicated techniques. And because it's made in the slow cooker, it can be started in the morning so it's waiting for you at the end of the day. Spiked with Vin Santo and made into a one-pot meal given the addition of potatoes, the subtly flavored cooking liquid will benefit from a bit of thickening atop the stove before it is served.

Ingredients

  • 1 pork loin (approximately 900 gr. in weight)
  • 2 tablespoons extra-virgin olive oil
  • 300 grams milk
  • 3 ounces vin santo (may substitute any sweet dessert wine)
  • 2 onions
  • 2 potatoes (medium)
  • ground nutmeg
  • salt (to taste)

Directions

  1. Rub the loin with salt.
  2. Slice the onion thinly.
  3. Cut the potatoes into cubes.
  4. Place 2 tablespoons of olive oil in the slow cooker with the onions, potatoes, milk, wine and a pinch of nutmeg, stir well.
  5. Add the pork loin.
  6. Cover and set the slow cooker to slow for 8 hours. Turn the pork loin every 2 hours while cooking.
  7. Let the roast cool in the slow cooker without removing the lid.
  8. Serve.

The meat turned out tender, and next time I will add a few spices since we really zesty pork. I served a mixed green salad with a lemon vinaigrette dressing to match the perfect pairing!
