Pork Loin with Caramelized Orange Sauce

Description

Just looking at this is enough to make you hungry. There are sure to be no leftovers, as everyone will be clamoring for more. The caramelized orange sauce seals in the juices, making this piece of meat tender and succulent. The orange sauce adds just the right amount of sweetness to complement the pork.

Ingredients

1 1/2 pork loin
olive oil
3 orange
2 onions (large)
1 cup cognac
2 tablespoons orange marmalade
4 tablespoons sugar
black peppercorns
bay leaves
cinnamon

Directions

1Sprinkle the pork with salt and cinnamon. Pour a little olive oil into the bottom of a pressure cooker and saute the pork loin slightly. Add the cognac and allow the alcohol to evaporate slightly.
2Add the onion, orange juice, bay leaf, and pepper, and cover the pork halfway with water.
3Cook in the pressure cooker for 30 minutes, turn the meat, and cook for 10 minutes more, adding more water if necessary.
4Remove the pork from the cooker and refrigerate, overnight if possible. Reserve the juices.
5Place the sugar in a saucepan over low heat until a caramel sauce is formed. Add the pork loin, coating well. Remove carefully and thinly slice.
6Reduce the juices in a saucepan, adding the orange marmalade and the remaining caramel sauce. Let simmer until thickened.
7Serve the pork slices with the sauce.
