Ingredients

  • 3 tablespoons vegetable oil
  • 2 1/4 pounds potatoes (peeled and cut into 1/2 inch cubes)
  • 1 onion (peeled and chopped)
  • 14 ounces baby spinach
  • 4 pork chops (about 6 oz each)
  • 4 slices butter (herb)

Directions

  1. Heat 1 tbsp of the oil in a non-stick frying pan. Add the potatoes and cook, turning, for 12-15 mins. Season to taste.
  2. Heat 1 tbsp of the oil in a saucepan, add the onion and sauté, stirring, for 2 mins. Add the spinach and cook, stirring occasionally, for 4-5 mins. Season to taste.
  3. Heat the remaining oil in a frying pan. Add the pork and cook, turning once, for 7 mins or until browned and cooked to desired doneness. Season to taste, transfer to serving plates and top each with a slice of the herb butter. Serve with the potatoes and spinach.
