Pork Chops with Caramelized Onions and Peppers

Ingredients

  • 2 New York pork chops (top loin, 3/4-inch thick)
  • olive oil
  • garlic pepper seasoning
  • 1 onions (medium, sliced)
  • 1/2 teaspoon sugar
  • 1 clove garlic (minced)
  • 7 ounces roasted red peppers (drained and cut into strips)
  • 2 teaspoons balsamic vinegar

Directions

  1. Heat a heavy skillet over medium-high heat. Brush chops lightly with oil and generously sprinkle both sides of chops with garlic pepper. Cook chops for 8 minutes, turning occasionally, until internal temperature on a thermometer reads 145 degrees Fahrenheit, followed by a 3-minute rest time. Remove chops to a serving platter; keep warm. Add onion, sugar and garlic to skillet. Cook and stir over medium-high heat until onion is lightly browned. Stir in roasted peppers and vinegar; heat through. Serve onion mixture over chops.
