Pork Belly with Orange Marmalade Glaze

  • 1/3 cup orange marmalade
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1/2 inch fresh ginger (peeled, grated)
  • 1 clove garlic (minced)
  • 2 3/4 pounds pork belly (skin removed)
  • greens (steamed Asian, to serve, optional)

Directions

  1. Preheat oven to 350°F. Line a baking dish with foil.
  2. Whisk together marmalade, vinegar, olive oil, ginger and garlic. Season.
  3. Place pork on a rack in prepared baking dish. Score pork fat then pour marmalade mixture over top. Bake for 1 hour 45 mins, or until cooked to your liking. Serve sliced with steamed Asian greens, if desired.
