Ingredients

  • 2 1/4 pounds pork belly (unscored, cut into 3-inch squares)
  • 1 tablespoon butter (each, and extra-virgin canola oil)
  • 1 tablespoon cumin seeds
  • 5 1/2 ounces raw cashew nuts (or 50/50 almonds and pine nuts)
  • 3 cloves garlic (finely chopped)
  • 1 pound fresh spinach
  • salt
  • freshly ground black pepper
  • 1 quart apple cider vinegar
  • 2 cups jaggery
  • 1 1/2 cups dark brown sugar
  • 3/4 cup coarse sea salt
  • 2 pieces cinnamon stick
  • 6 red chilies (large, broken in half dried)
  • 1 lime
  • 2 1/2 cups chicken stock (good)
  • 2 tablespoons cilantro stems (chopped)
  • 1 tablespoon curry leaves (chopped, preferably fresh; if using dried, soak in water for 10 to 12 minutes and dry thoroughly before chopping)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger root (finely chopped)
  • 1 green chile (finely chopped fresh)
  • 4 cloves (lightly crushed)
