Ingredients

  • 1 1/2 pounds pork shoulder (or butt cut in 1 ½" cubes)
  • 1 cup sugar cane (vinegar, vine)
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 3 garlic (gloves, minced)
  • 1 bay leaf
  • 1/4 teaspoon pepper
  • 1/2 cup water
  • 2 tablespoons cooking oil

Directions

  1. 1Combine all ingredients, except cooking oil, in pot and let stand for 30 minutes. Then simmer, covered for one hour (or until meat is tender). Drain and keep sauce.
  2. 2Heat cooking oil in skillet and brown meat on all sides. Place in serving dish. Pour off remaining cooking oil, add reserved sauce and cook for 1 to 2 minutes. Be sure to scrape all browned bits sticking to pan (best part!). Pour sauce over meat and serve.
