  • 8 artichoke hearts (large, cut into eighths)
  • 2 fennel bulbs (large, cored and thinly sliced)
  • 1/4 cup olive oil
  • 2 Tbsp. minced garlic
  • 1/2 tsp. crushed red pepper flakes
  • 1/2 cup white wine
  • 1/4 cup lemon juice (freshly squeezed)
  • extra-virgin olive oil (for drizzling)
  • 1/2 cup pecorino (grated, Toscano, or pecorino Romano cheese)
  • 1/2 cup Italian flat leaf parsley (chopped)
