Description

This savory rice dish features earthy porcini mushrooms, which add a ton of subtle flavor. Red bell pepper and onions both add aromatic base flavors that accent the mushrooms. Cooking rice (or any grain for that matter) in chicken stock instead of water adds extra flavor and makes the dish super rich. With only 7 ingredients, this recipe comes together in about 40 minutes for a quick and simple side-dish.

Ingredients

1 tablespoon vegetable oil
1 onions
1/2 red bell pepper
300 grams porcini
160 grams short-grain rice
600 milliliters chicken stock
fresh thyme

Directions

1Add the oil to a saucepan on medium heat. Add the onion and bell pepper and saute.
2Once softened, add the mushrooms and saute for 4 minutes.
3Add the rice and saute a few minutes.
4Add the chicken stock and a pinch of thyme and cook on low heat 18 minutes.
5Serve warm.
