  • 3 boneless, skinless chicken breasts (chicken)
  • 8 ounces sour cream
  • 2 cans cream of chicken soup
  • 1 1/2 tablespoons poppy seeds
  • 30 crackers (Ritz type)
  • 1 cup butter

    Directions

    1. Cut the chicken breasts into cubes and then brown with a little bit of butter. Combine the browned chicken, the sour cream and the soup in a casserole dish. Melt the butter and crush the crackers. In a separate bowl, combine melted butter, poppy seeds and cracker crumbs. Pour over chicken. Bake at 350 for 30 - 40 minutes. Serve over rice.

    I’ve been making this for 25 years and my mom and grandmother before that! every single person who has ever tried this, has liked it. It’s super easy and tastes great even without the poppy seeds! It’s even better the next day warmed up after it’s had a chance to really set. perfect for taking to potlucks and sick friends, after a baby or other event. My kids all called it ‘the chicken dish’ and now their kids ask for it too. Perfect comfort food. Serve it over white rice and add a side of veggies and you’re good to go
