Description

With a recipe that doesn't take too long to prepare, these yeasted breadsticks made with appl-purpose flour, brewer's yeast and barley are kneaded for about 10 minutes and only need an hour to rise. Before they're placed in the oven, the breadsticks are sprinkled with poppy seeds, the addition of which add visual interest and a textural "pop." Serve them warm with butter that's showered with flaky sea salt.

Ingredients

  • 250 grams all-purpose flour
  • 130 milliliters water
  • 8 grams yeast (brewer’s)
  • 5 grams salt
  • 25 grams extra-virgin olive oil
  • 2 teaspoons poppy seeds
  • 1/2 barley (level tsp. malt)
  • extra-virgin olive oil (for brushing)

Directions

  1. 1Preheat the oven to 190C.
  2. 2Place the flour on a work surface and make a well in the center.
  3. 3Add the water, yeast, salt, and oil in the well and knead for approximately 8 to 10 minutes. The dough should not be too soft.
  4. 4Shape the dough into a loaf and then roll it out into a rectangular sheet and brush it with olive oil.
  5. 5Cover the dough and let it rise for 60 minutes.
  6. 6Use a sharp knife to cut the dough into sticks approximately 2 centimeters wide.
  7. 7Place the breadsticks on a baking sheet, leaving some space between each and sprinkle them with the poppy seeds.
  8. 8Bake for 15 minutes.
  9. 9Remove the breadsticks from the oven and serve.
