Ingredients

  • 1/4 cup orange marmalade
  • 1/4 cup pomegranate juice
  • 2 teaspoons minced garlic
  • 2 teaspoons dijon mustard
  • 1 1/2 teaspoons rosemary leaves (chopped fresh, plus extra for garnish)
  • 1 whole rotisserie chicken

Directions

  1. Preheat oven to 375°F.
  2. In a small saucepan, combine marmalade, pomegranate juice, garlic, mustard and rosemary. Bring to a boil then reduce heat and simmer for 5 mins, or until reduced by 1/2. Season.
  3. Place chicken in a roasting pan and brush with glaze. Roast for 15 mins, basting occasionally, or until warmed through. Garnish with rosemary.
