Ingredients

  • 4 eggs
  • 2 1/2 cups whole milk (or 2%)
  • 1 cup all-purpose flour
  • 2 teaspoons canola oil
  • 3 1/2 tablespoons butter
  • 2 cups vegetable stock
  • 1/4 pound gouda cheese (grated)
  • 1 onion (peeled and finely chopped)
  • 1 2/3 pounds spinach
  • grated nutmeg (to taste)
  • 1/3 pound cherry tomatoes (cut in half)
  • 8 polish sausages (approx 3 oz, halved lengthwise)

Directions

  1. Preheat oven to 400°F. Whisk 1 egg, 1/2 cup milk and pinch of salt. Whisk in 1/2 cup flour then let batter rest for 15 mins. Heat 1 tsp oil in a 10 inch nonstick pan and make 3 pancakes with batter.
  2. For the sauce, melt butter in a saucepan, add 1/4 cup flour and cook for 3-4 mins. Slowly add 2 cups milk and stock and bring to a boil, stirring. Add cheese and simmer for 3-4 mins. Season then remove from heat and let cool slightly. Whisk in 3 eggs, 1 at a time.
  3. Meanwhile, heat 1 tsp oil in a pan and sweat onion until soft. Add spinach and season. Add nutmeg to taste and cook for 4 mins. Drain.
  4. Place 1 pancake in a 10 inch round baking dish. Add 1/3 of spinach, sausages, tomatoes and sauce. Repeat with remaining components. Bake for 30-40 mins. Cover with foil if necessary to prevent burning.
