Ingredients

  • 1 handful beans (preserved Pocha)
  • 1/2 garlic clove (head)
  • 8 cherry tomatoes (dried)
  • 2 tablespoons virgin olive oil
  • salt
  • 4 slices sheep’s milk cheese (cured or semi-cured)

Directions

  1. Wash the Pocha beans in a strainer to remove the liquid from the preserve. Drain.
  2. Hydrate the cherry tomatoes in a bowl with hot water. Drain and pat dry.
  3. Slice the garlic and saute in olive oil until tender. Add the Pocha beans and stir.
  4. Place the beans on a plate, add the cherry tomatoes around the beans. Add the cheese on top and serve immediately.

This bean salad is perfectly balanced, It has just enough of everything to make it taste really good. I wouldn't change a thing about the recipe. You could serve this dish warm or cold. I have tried it both ways.
