Ingredients

2 slices bread
refried beans (Prepared)
2 slices mozzarella cheese (or other cheese such as cheddar or provolone)
1/2 chile pepper (poblano, roasted, peeled, and seeded)

Directions

1Spread one piece of bread with the refried beans and top with 1 slice of cheese. Top with the poblano pepper, another slice of cheese, and the other slice of bread.
2Place the sandwich on a skillet to toast the bread and melt the cheese. Serve.
