This tasty Poblano Pepper Sandwich is perfect for lunches on the go, quick snacks, or paired with your favorite side dish for a delectable dinner. All you need is 2 slices of your favorite bread, prepared refried beans, 2 slices of mozzarella cheese (you can substitute cheddar or provolone), and ½ roasted, peeled and seeded poblano or chile pepper.

Ingredients

  • 2 slices bread
  • refried beans (Prepared)
  • 2 slices mozzarella (or other cheese such as cheddar or provolone)
  • 1/2 chile pepper (poblano, roasted, peeled, and seeded)

Directions

  1. Spread one piece of bread with the refried beans and top with 1 slice of cheese. Top with the poblano pepper, another slice of cheese, and the other slice of bread.
  2. Place the sandwich on a skillet to toast the bread and melt the cheese. Serve.

An important factor in this sandwich is the type of bread used. We have tried various flatbreads with good results. We also prefer smoked provolone rather than the other cheeses. After my peppers have roasted I put them in a plastic food storage bag for a few minutes until they “sweat.” That makes peeling them much easier. We make these sandwiches for a quick snack or cut in them in quarters and serve as appetizers to accompany Mexican beer.
