  • 1 teaspoon salt
  • 6 peppercorns (Bruised)
  • 2 parsley (sprg)
  • 4 salmon steaks (6-8oz ea)
  • 1 sugar
  • 1/2 cup white vermouth
  • 1/2 cup half & half
  • 2 tablespoons butter
  • 1/4 pound cooked shrimp (peeled & Deveined)
  • 1/2 teaspoon dried dillweed
  • 1 teaspoon capers (Rinsed, chopped)

  • cooked vegetables (Fresh)

    Directions

    1. Boil water in large skillet with salt, peppercorns & parsley; ease in steaks & cover.
    2. When water begins to reboil, adjust heat to low; poach fish 5 minutes.
    3. Remove from heat & pour off all but 1/2 cup liquid; add sugar & vermouth.
