Description

This recipe, which takes 35 minutes to prepare, is for Plum and Rhubarb Preserves. This recipe is sweet and hearty. Ingredients include peeled plums, fruit juice, brown sugar, rhubarb stalks, lemon juice and zest, fresh copped lemongrass, cinnamon, star anise, and nutmeg. These preserves pack a powerful punch.

Ingredients

1 kilogram plums (peeled, halved and pitted)
100 milliliters fruit juice
150 grams brown sugar
1 rhubarb stalks (large)
1/2 lemon juice (and zest)
1 teaspoon lemongrass (fresh, chopped)
1/2 teaspoon cinnamon
1 anise (star)
1/4 teaspoon nutmeg

Directions

1Mix the sugar, plums, and red fruit juice in a medium-size saucepan over medium heat.
2Add the rhubarb in pieces, and remaining ingredients, bring to boil, stirring occasionally, until plums are tender.
3Grind mixture (optional), and pour in sterilized jars. Turn jars upside down for a few minutes to create a natural vacuum.
