Sweet and refreshing, this Plum and Mint Nectar will be your rejuvenation on a warm summer afternoon. Made with fresh, ripe plums, this juice also features the refreshing cool flavor of mint. Requiring simple ingredients you have on hand at home and a blender, this juice can be whirled up quickly. In just 15 minutes you can pour yourself a tall glass of fruity refreshment. Adjust the amount of liquid you add to obtain your desired thickness.

Ingredients

  • 250 grams plum (pitted)
  • 3 mint leaves
  • 2 tablespoons vanilla sugar
  • 10 ice cubes
  • 500 milliliters water (fresh)

Directions

  1. Remove the pit from the unpeeled plums.
  2. In a blender or food processor, add the plums and ice cubes, and pulse for 2 seconds on the highest speed. Pulse about 5 times until the ice is almost melted.
  3. Add the sugar, water, and mint to the mixture, and blend with a hand mixer until it becomes very liquid.
  4. Add a little more water for a more liquid juice.

This is a wonderful nectar! I've made it several times, during the summer, and serve it with fresh berries and whipped cream. At times, I add in a swirl of honey.
