  • 1 tablespoon unsalted butter
  • 1 yellow onion
  • 1 teaspoon brown sugar
  • 6 pieces pancetta
  • 1/4 cup mozzarella
  • 4 tablespoons gorgonzola (add to taste)
  • 1 cup arugula
  • 1 tablespoon oil (0live)

    Directions

    1. Preheat oven to 450 degrees.
    2. Cut the ends of the onion and slice so that you have about 1/4 inch strips. Melt butter in large skillet over medium-high heat. Add onions, salt and sugar. Stir the onions until they are coated in the butter mixture.
    3. Reduce heat to medium-low. You will need to stir frequently to keep from burning. Cook until browned and soft, about 30-40 minutes. Set aside.
