This tomato soup is flavored with the makings of pizza, making for a healthy meal when you are craving those flavors. Ingredients

  • 1 teaspoon olive oil
  • 1/2 green pepper (diced)
  • 1/3 cup onion (diced)
  • 10 mushrooms (diced)
  • 1/2 cup tomato sauce (prepared, for pasta)
  • 1 1/2 cups water
  • 50 grams pepperoni (cut into halves)
  • 1/2 teaspoon oregano (ground)
  • 1/2 cup mozzarella (shredded)

Directions

  1. Place the olive oil in a saucepan and saute the pepper, onion, and mushrooms, cooking for approximately 8 minutes and stirring from time to time until the vegetables soften and are cooked through.
  2. Add the tomato sauce, water, pepperoni, and oregano. Cover the pan, lower the heat, and allow to simmer for 10 minutes.
  3. Serve, topped with cheese.

I serve this soup with little fishy crackers that my son loves. It tastes so good. Sometimes, I add mini pepperoni and spiral pasta in it. Don't turn the heat up too high when you make it. It scorches easily. This version of tomato soup is really flavorful.
