Description

These muffins capture all the best aspects of pizza and capture them in a portable and tasty little treat. You can enjoy these for breakfast or pair them with a salad or some grilled meat for a filling meal. The tomatoes add a nice freshness and pair perfectly with creamy provolone cheese and oregano, the combination of the flavors come together for a delicious pizza-inspired treat. Ingredients

  • 1 eggs
  • 125 milliliters plain yogurt
  • 3 tablespoons sunflower oil
  • 140 grams flour
  • 10 grams baking powder
  • baking soda
  • salt
  • dried oregano
  • 75 grams tomatoes (peeled and cubed)
  • 75 grams provolone cheese (cubed)

Directions

  1. 1Preheat the oven to 200 degrees Celsius.
  2. 2In a glass, mix together the egg, yogurt, and oil. Beat lightly and set aside.
  3. 3In a bowl, mix together the flour, baking powder, and a pinch each of baking soda, salt, and oregano. Then, add the tomatoes and cheese and mix well.
  4. 4Add the liquids to the solids, and mix with a wooden spoon about a minute until the flour has been absorbed. Do not overmix.
  5. 5Fill a muffin pan to the top, and bake the muffins for 20 minutes. Allow to cool before eating.
