Description

These muffins capture all the best aspects of pizza and capture them in a portable and tasty little treat. You can enjoy these for breakfast or pair them with a salad or some grilled meat for a filling meal. The tomatoes add a nice freshness and pair perfectly with creamy provolone cheese and oregano, the combination of the flavors come together for a delicious pizza-inspired treat. Ingredients

1 eggs
125 milliliters plain yogurt
3 tablespoons sunflower oil
140 grams flour
10 grams baking powder
baking soda
salt
dried oregano
75 grams tomatoes (peeled and cubed)
75 grams provolone cheese (cubed)

Directions

1Preheat the oven to 200 degrees Celsius.
2In a glass, mix together the egg, yogurt, and oil. Beat lightly and set aside.
3In a bowl, mix together the flour, baking powder, and a pinch each of baking soda, salt, and oregano. Then, add the tomatoes and cheese and mix well.
4Add the liquids to the solids, and mix with a wooden spoon about a minute until the flour has been absorbed. Do not overmix.
5Fill a muffin pan to the top, and bake the muffins for 20 minutes. Allow to cool before eating.
