These muffins capture all the best aspects of pizza and capture them in a portable and tasty little treat. You can enjoy these for breakfast or pair them with a salad or some grilled meat for a filling meal. The tomatoes add a nice freshness and pair perfectly with creamy provolone cheese and oregano, the combination of the flavors come together for a delicious pizza-inspired treat. Ingredients

  • 1 egg
  • 125 milliliters plain yogurt
  • 3 tablespoons sunflower oil
  • 140 grams flour
  • 10 grams baking powder
  • baking soda
  • salt
  • dried oregano
  • 75 grams tomatoes (peeled and cubed)
  • 75 grams provolone cheese (cubed)

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a glass, mix together the egg, yogurt, and oil. Beat lightly and set aside.
  3. In a bowl, mix together the flour, baking powder, and a pinch each of baking soda, salt, and oregano. Then, add the tomatoes and cheese and mix well.
  4. Add the liquids to the solids, and mix with a wooden spoon about a minute until the flour has been absorbed. Do not overmix.
  5. Fill a muffin pan to the top, and bake the muffins for 20 minutes. Allow to cool before eating.

I love the concept behind these. My children adore pizza, but I get tired of the same old, same old. This allows them to have the nice pizza flavors and its unique shape makes them interesting. Just like pizza, you can top or stuff them however you like. I used olive oil instead of sunflower oil.
