  • 3 plum tomatoes (canned, well drained and seeded, haphazardly cut or chopped into 1/2"-or-so pieces)
  • 1/2 teaspoon minced garlic (finely-)
  • salt (to taste)
  • 1 ounce mozzarella (sliced or coarsely shredded)
  • 2 tablespoons extra-virgin olive oil
  • 1 chiffonade (fresh basil leaf)

    Directions

    1. At least 30 minutes before baking, place an oven rack on the lowest level, preferably holding a pizza stone, and preheat the oven to 500 degrees. Shape the dough into a pizza following the recipe directions.
    2. On the top (except on the ridge), evenly scatter, sprinkle, or drizzle on all the remaining ingredients in the order given.
    3. Bake for 7 to 8 minutes, until the ridge is tinged with brown. Serve immediately.
