Ingredients

  • 400 grams white bread flour (or Tipo '00' flour)
  • 20 grams dried yeast
  • 50 grams milk
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon sea salt
  • 200 milliliters lukewarm water

Directions

  1. In a large bowl, put the yeast with 100 ml lukewarm water and 5 tablespoons flour and mix gently.
  2. Let rise for 30 minutes this leaven.
  3. In the bowl of food processor, combine the flour, the leaven, 100 ml lukewarm water remaining , milk, olive oil and salt until the dough forms a ball.
  4. The dough should be soft but not sticky. If it is too sticky, add a bit more flour and process for another minute.
  5. Cover with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.
