Description

You have never encountered a banana bread quite like this one. Sweetened with maple syrup with a hint of coconut flavor, pistachios, almonds, and cashews add the perfect crunch. A great way to use up those browning bananas on your counter.

Ingredients

  • 3 mashed banana
  • 2 eggs
  • 1/2 cup maple syrup
  • 1/4 cup softened butter
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 tablespoon salt
  • 1/2 cup milk
  • 1/2 cup chopped almonds
  • 1/2 cup pistachios (chopped)
  • 1/2 cup cashew nuts (chopped)
  • 1/4 cup coconut (unsweetened, powder.)

Directions

  1. 1Preheat oven to 350 degrees Fahrenheit.
  2. 2In a large bowl, mix the butter, maple syrup, and mashed banana.
  3. 3Add the eggs one at a time, mixing between each one.
  4. 4In another bowl, mix flour, baking powder, salt, almonds, and cashews.
  5. 5Add flour mix to banana mix.
  6. 6Gradually add milk, mixing to a smooth paste.
  7. 7Pour the mixture into a greased and floured bread pan.
  8. 8Scatter crushed pistachios on top and sprinkle with coconut powder.
  9. 9Bake for 45 minutes.
