Ingredients

  • 200 grams pistachios
  • chicken cutlets
  • salt
  • ground black pepper
  • 1 egg
  • vegetable oil

Directions

  1. Open the pistachios and put them in a mortar and pestle or spice grinder. Grind well until a powder forms.
  2. Season the cutlets with salt and black pepper. Coat with the beaten egg, and then dredge in the pistachio meal.

I never would have thought to use Pistachios in place of breadcrumbs, but this is fantastic. Make sure to grind them very well, or the texture will be too rough and it could be too difficult to get the coating to stick. If you like the taste of pistachios, you will LOVE them as a “breading.” The chicken is juicy with great flavor, the coating just makes it over the top.
