Description

A French classic, this king cake features pistachios and pears for a delicious dessert. A base of crisp, buttery puff pastry and creamy, sweet custard make for an irresistable dessert. This is the perfect dessert for a special occasion or celebration. It is up to you whether or not you hide a special trinket inside for one lucky person to find!

Ingredients

2 puff pastry sheets
custard (amounts halved)
100 grams almonds (powder)
80 grams sugar
1 tablespoon flour
70 grams butter (soft)
2 eggs
30 grams pistachios (powder)
1 pears (peeled and diced)
1 egg yolks (diluted in 1 teaspoon of water)

Directions

1Preheat oven to th.7
2Prepare the custard and put it in the refrigerator.
3Mix with a spatula (not a whisk) the butter, sugar, pistachios, almonds and flour.
4Add the eggs one by one.
5Mix the almond powder with pastry cream for the almond filling.
6Place a circle of puff pastry on a baking sheet covered with parchment paper..
7Spread the almond filling on the dough. Be careful to leave a 3-4 cm of border.
8Spread out the diced pear onto the filling.
9Moisten the free edge with some water.
10Place the second puff pastry on top and press the two edges together until sealed to avoid any possible leak.
11Brush the diluted egg yolk on the cake and bake for 30-35 minutes.
