Financiers lovers take heart! This dainty recipe delivers the subtle taste of pistachios to counter balance the bittersweet flavor of the raspberry. Butter melted into the hot, steaming financiers is enough to make your mouth water. They make for a great breakfast on the go, or are perfect for ‘tea time’ when you want to copy the British. Topped with whipped cream, they make a great compliment to strong, black coffee.

Ingredients

  • 125 grams unsalted butter
  • 50 grams flour
  • 150 grams icing sugar
  • 50 grams almond (powder)
  • 125 grams egg whites
  • 1 teaspoon pistachio paste (uncolored)
  • 250 grams raspberries

Directions

  1. Preheat oven to 210 degrees Celsius.
  2. Heat and brown the butter in a pan until it melts and oozes a nutty smell. Let cool.
  3. Mix together the flour, icing sugar, and almond powder. Gradually add the egg whites. Stir in the cooled browned butter. Add the pistachio paste.
  4. Using a small spoon, fill the molds, and put a raspberry in the center.
  5. Bake 10-12 minutes (depending on the size of the financiers).
