Ingredients

  • 1/4 cup cilantro (minced)
  • 1 teaspoon fresh ginger (grated)
  • 2 scallions (minced)
  • 2 cloves garlic (minced)
  • 1/3 cup salsa (spicy)
  • 1/4 cup olive oil
  • 2 lemons
  • salt and ground black pepper
  • 6 chicken legs

Directions

  1. Place the cilantro, ginger, scallions, garlic, salsa, olive oil, lemon rind, and juice into the blender or food processor. Salt and pepper to taste and blend until smooth.
  2. Place the chicken legs into a glass or plastic container and pour the marinade over them. Turn well to coat and let marinate for at least 6 hours.
  3. Grill the chicken on medium-high until well-cooked and golden brown, approximately 20-25 minutes.

I could go on and on about how flavorful this chicken is. I use this marinade on chicken breasts and other meat too.  I have never freshly ground ginger before, but it is a bit spicy. It kind of gives the marinade a kick. I often add limes to this one too, as it balances the lemon and enhances the flavors. Be sure to allow the meat time to soak up all the juices before grilling or frying this one. You will be impressed.
