Ingredients

  • 1/4 cup cilantro (minced)
  • 1 teaspoon fresh ginger (grated)
  • 2 scallions (minced)
  • 2 cloves garlic (minced)
  • 1/3 cup salsa (spicy)
  • 1/4 cup olive oil
  • 2 lemon
  • salt and ground black pepper
  • 6 chicken legs

Directions

  1. 1Place the cilantro, ginger, scallions, garlic, salsa, olive oil, lemon rind, and juice into the blender or food processor. Salt and pepper to taste and blend until smooth.
  2. 2Place the chicken legs into a glass or plastic container and pour the marinade over them. Turn well to coat and let marinate for at least 6 hours.
  3. 3Grill the chicken on medium-high until well-cooked and golden brown, approximately 20-25 minutes.
