With layers of creamy yogurt and tart grapefruit, these pink grapefruit parfaits are a wonderful breakfast accompaniment or snack on the go. Sweetened with brown sugar and honey, the grapefruit adds a citrus boost of flavor to yogurt flavored with cinnamon and ginger. Ready in 25 minutes, these parfaits are both tasteful and full of taste.

Ingredients

  • 2 grapefruits (large pink)
  • 4 tablespoons brown sugar
  • honey
  • 150 grams greek yogurt
  • 250 milliliters sour cream
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • chia seeds

Directions

  1. Finely grate the zest of 1 grapefruit, be careful not to pierce the bitter white skin.
  2. Peel the grapefruit, detach and peel or supreme the segments. Place in a bowl and sprinkle with brown sugar.
  3. Whisk the sour cream in a bowl until it thickens while remaining soft.
  4. Add yogurt, honey, spices, grapefruit zest, and remaining sugar.
  5. Whisk until mixture is smooth.
  6. Choose pretty containers, and fill them alternating layers of cream and grapefruit quarters.
  7. Garnish with a few chia seeds.
  8. Serve immediately.

This recipe made a great breakfast accompaniment. I used ground pine nuts rather than chia seeds and added a small amount of coconut to the yogurt mixture. Next, I'll try it with toasted sesame seeds.
