Fresh pineapple is delicious on its own, but also wonderful when pureed with mint and ice to make a summer refresher. Honey can be added for extra sweetness, if desired. You can also add enough cold water to achieve your desired consistency. Make it ahead and keep in the refrigerator for whenever you want a morning or afternoon pick me up, or make a big batch and serve as a non-alcoholic option when entertaining.
- 1/3 pineapple
- 3 mint leaves
- 5 ice cubes
- water (to taste)
- 1 teaspoon honey
- Cut the pineapple into small cubes. Add the pineapple, mint, and ice to the blender. Blend until smooth.
- Add honey and water to taste, blend again to mix.
- Refrigerate until serving, serve over ice.
