Pineapple and Walnut Cake

Ingredients

  • 2 1/4 cups self-rising flour (sifted)
  • 1 1/4 cups granulated sugar
  • 15 ounces crushed pineapple in juice
  • 1 1/4 cups walnut halves (roughly chopped)
  • powdered sugar (to dust)

Directions

  1. Preheat oven to 350°F. Lightly grease and line an 8 inch round cake pan with parchment paper.
  2. Combine flour and sugar. Add pineapple, pineapple juice and walnuts. Mix until combined. Transfer to prepared pan, smooth surface and bake for 40-45 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
  3. Dust with powdered sugar to serve.
