It's worth picking up a mortar and pestle at your local kitchen supply store for muddling herbs and other ingredients when making drinks, but also to use in recipes such as this one. Here, the sugar and fresh mint leaves are ground together to make a green sugar before being combined with fresh lime juice. You could use this concoction in so many different ways, including in delectable cocktails, but it's especially good when simply poured over sliced pineapple.


  • 4 slices pineapple
  • 5 mint leaves
  • 1 teaspoon lime juice
  • 2 teaspoons brown sugar


  1. Cut the pineapple slices and set aside.
  2. In a mortar, place the sugar and mint leaves and grind for 1 minute or until the sugar is completely green. Add the lime juice and stir.
  3. Sprinkle over the slices of pineapple.
