I think this fudge is delicious, but it is a bit of an acquired taste, when I have given it to other people I have got very mixed reactions. This fudge has more of a dry slightly crumbly texture as opposed to the sticky creamy texture of some other fudges. The first time I made it it was far too crumbly but now I beat it for longer, until the color changes, becoming lighter and more dull, I also use 1/2 cup of double cream and 1/4 cup extra sugar as this makes the texture a bit more creamy. I prefer to use half the lemon juice as otherwise I find the flavor a little overpowering. I generally use fresh pineapple for this recipe as I prefer the fresher flavor and sometimes add some chopped cherries or other dried fruit to add some variety, other times I decorate the top with chopped mixed nuts just before it has set to create a crunchy topping.
