    This is a wonderful, refreshing salad! I used a Serrano pepper instead of the jalapeño because that’s what I had in the fridge. I also used approximately even amounts of pineapple and cucumber. I also put about a half cup of fresh pineapple juice in the salad. I skipped the salt and pepper just for my family’s tastes. It is a great summer salad. I will definitely make it again.
