There are three distinctively delicious layers in this gratin dish: Tender sauteed vegetables (garlic, leek, zucchini, and tomato, with basil); poached hake and salmon fillets; and mashed potatoes (made with potatoes that are cooked along with the fish and take on some of their flavor). Oh yeah, and grated cheese is sprinkled all over the top of the casserole to cover, and which melts and turns golden brown during baking.

Ingredients

  • 50 milliliters olive oil
  • 3 garlic cloves (chopped)
  • 1 leeks (white part only, sliced)
  • 1 zucchini (cubed)
  • 2 tomatoes (ripe, cubed)
  • 10 basil leaves
  • salt (to taste)
  • 750 grams potatoes
  • 150 milliliters milk
  • 400 grams hake fillets
  • 200 grams salmon loins
  • 150 milliliters milk
  • nutmeg (to taste)
  • 100 grams Ilha Azul Cheese
  • semi-hard cheese
  • 3 chives (chopped)

Directions

  1. Preheat oven to 180°C (approximately 350°F).
  2. Heat 30 ml olive oil in a saucepan, add garlic and leek.
  3. Simmer over low heat for about 10 minutes.
  4. Add zucchini, tomato, basil leaves and season with a pinch of salt.
  5. Cook for 5 minutes, until the zucchini is tender.
  6. Remove vegetables from heat and set aside.
  7. Cook potatoes in plenty of boiling, salted water until knife-tender.
  8. Just before the potatoes are finished cooking, add fish.
  9. Drain fish and potatoes and set aside.
  10. In a saucepan, heat 20 ml olive oil and cook 1 garlic clove over medium heat for about 3 minutes.
  11. Process potatoes through a food mill into the pan with garlic.
  12. Add milk and season with salt and nutmeg.
  13. Mix well until puree is smooth and creamy.
  14. In a rectangular baking dish, arrange vegetables in an even layer in bottom of pan.
  15. Top vegetables with a layer of salmon and hake.
  16. Spread mashed potatoes in an even layer over fish and sprinkle potatoes with grated cheese.
  17. Bake in preheated oven until cheese is melted and bubbly.
  18. To serve, sprinkle with chives.
