Description
Peter Piper would have loved to pick a peck of these Pickled Poblano Peppers. They take about 65 minutes to prepare these tasty, hearty stuffed peppers. Ingredients include poblano peppers, tuna, mayonnaise, peas, onions, garlic, carrots, olive oil, vinegar, water, herbs, marjoram, oregano, cinnamon sticks, cumin, clove, allspice berries, salt, and sugar.

- 12 poblano chiles
- 2 cans tuna
- 2 cups mayonnaise
- 1 can peas (drained)
- 1 onion (sliced)
- 1 head garlic (peeled)
- 1 carrot (julienned)
- olive oil
- 1 cup vinegar
- 1 cup water
- 1 bunch herbs
- 1 leaf marjoram
- 1 pinch oregano (ground)
- 1 cinnamon stick
- 1 pinch cumin
- 2 cloves
- 4 allspice berries
- salt
- 1 Tbsp. sugar

Directions
- Peel the poblano peppers and remove the veins and seeds.
- Place the mayonnaise, tuna, and peas in a dish and mix well. Use this mixture to fill the poblanos. Close each one, using a toothpick to hold.
- Saute the carrot, onion, and garlic in the olive oil in a skillet until the onion is transparent. Add the vinegar, water, bay leaf, marjoram, thyme, oregano, cinnamon, cumin, cloves, allspice, and salt. Allow to simmer on low heat and add the sugar.
- Add the poblanos to the skillet and allow to simmer for 10 minutes. Place on a platter and refrigerate before serving.
