- 15 pounds chicken tenders (or skinless breasts cut into strips)
- 1 1/4 cups pickle juice (dill, enough to cover the chicken)
- 1/2 teaspoon kosher salt (and black pepper, to taste)
- 1 large egg (beaten)
- 1 large egg white
- 1/2 cup seasoned breadcrumbs
- 1/2 cup panko (seasoned)
- cooking spray

I have never marinated these more than a couple of hours. Pickle juice is really intense! In fact, I cut it with a little water. I also cut my chicken into nugget sized pieces. I take them straight from the juice, roll them in some flour seasoned with some Lawry's and fry them in oil. I also toss some pickle slices in with the chicken, coat them, and fry as well! The hubby loves fried pickles. Taste just like Chick-fil-A! Kids are completely addicted!

Delicious! Lots of flavor and easy to make! We had plain breadcrumbs, soI added Italian seasoning to it. I'll definitely make this recipe again.
