Ingredients

  • 180 grams all-purpose flour
  • 1 teaspoon baking powder
  • 100 grams extra-virgin olive oil
  • 3 eggs
  • 200 grams pesto sauce (good quality variety)
  • 50 grams pecorino cheese (grated)
  • 1/4 cup pinenuts (un-toasted)

Directions

  1. 1Preheat the oven to 180 degrees Celsius.
  2. 2Toast the pine nuts in a non-stick pan.
  3. 3Beat the eggs with the oil and the pesto sauce in a bowl.
  4. 4In another bowl, combine the flour with the baking powder and the cheese.
  5. 5Add the liquid ingredients to the dry ingredients.
  6. 6Last, add the toasted pine nuts to the mixture.
  7. 7Butter and flour a springform pan and pour the batter inside.
  8. 8Garnish the top with a few of the pine nuts, and bake for approximately 30 to 35 minutes (until a toothpick inserted in the center comes out clean).
  9. 9Remove the cake from the oven and serve.
