Thickened with ground almonds and flavored with parmesan cheese, this red pesto combines the saltiness of anchovy filets with the sweetness of ripe cherry tomatoes and the refreshing herbal flavor of fresh basil. Serve over a bed of pasta and steamed veggies or as an accompaniment to your favorite grilled meat.

Ingredients

  • 20 grams parmesan
  • 50 grams almonds (whole, peeled)
  • 1 clove garlic
  • 1 bunch fresh basil
  • 4 anchovy fillets (in oil)
  • 250 grams cherry tomatoes
  • olive oil

Directions

  1. Blend the parmesan, almonds, and garlic together in a blender. Add the basil, anchovies, and tomatoes little by little. When pureed, add olive oil.
  2. Garnish with additional basil, tomatoes, and parmesan.

I like the photo suggestion that accompanies this recipe. We mixed the pesto in with penne and added chunks of grilled chicken breast before garnishing with additional chopped basil, cherry tomatoes and parmesan.
