Description

Deliciously healthy gluten free banana pancakes topped with natural Greek yoghurt scented with orange blossom water, sweet juicy pomegranate, blueberries, fresh fig and pecans finished off with a drizzle of raw honey.

Ingredients

  • 2 bananas
  • 4 eggs
  • 3 dessert (spoons of buckwheat flour)
  • 2 tablespoons coconut oil
  • 3 dessert (spoons Natural Greek yoghurt)
  • 1 teaspoon orange blossom water
  • pomegranate
  • raw honey

    Directions

    1. Add bananas, eggs and flour to a blender and blitz.
    2. Heat coconut oil in a frying pan and add pancake mixture. You should get approx 6 pancakes from this mix. Cook approx 1-2 mins each side then remove and place on serving plate.
    3. Mix orange blossom water with the natural yoghurt and place on top of pancakes.
    4. Sprinkles with blueberries, pomegranate, sliced fresh fig and pecans. Drizzle with raw honey and serve!
