perhaps its my fault but it was so dry. I made an 5 86 lbs pork loin, i read one review saying next time they'll use less heat so i did 340° for 1hr 57 mins. so so dry... oh well

Amazing flavor! Unfortunately for a 7lb...2 hours made it a bit dry. Less heat or time next time I make it.

It took me over 3 hours to cook a 1.4 pound pork loin... measurement of weight and time is VERY OFF! This ruined our whole meal as everything else had to be reheated to be eaten together.

I did a much smaller roast but the ease and favor were simple yet tasty. I did check every 10 mins after 20 mins at 350, that worked slick.

I used Jennifer's Nicely Spiced Olive Oil (Mediterranean Blend), garlic salt instead of garlic powder and minced onions instead of onion powder, and the recipe was fabulous. I only substituted because that's what I had, The meat was very moist and very tender. AWESOME
