I replace the flour with a gluten free flour mix and the egg with a flax egg. I use it for waffles instead of pancakes, but the waffles come out great every time 👍🏽

I halved the recipe because I was only feeding two people. It turned out delicious. I added a bit of vanilla to the batter just for some extra flavor. They were nice and fluffy, not too dense.

I was skeptical because of the uneven browning like a traditional pancake but these turned out light and fluffy. I add vanilla to my mix and next time I may cut back on the oil. This is headed to the printer so I can have a hard copy and not risk losing it.

Very fluffy & tasty. Added strawberries & blueberries to mix. Also only did half batch & saved half batch of dry ingredients for later. Still made 12 pancakes.

used half the baking poweder and added a 1/4 cup of milk because they were too thick for some reason. I also added 1/2 tsp of vanilla for taste. Taste amazing!! Not super sweet. very good recipe.

Recreated this recipe with an added tip: mixing together the wet and dry in same bowl using a well and folding in the ingredients. Probably should have at least whisked together the eggs first and then poured it into the wet and dry ingredients as the eggs didn’t get broken down. Only issue is that the recipe seemed to have too much of a sweet and metallic flavor probably from the 5t of baking powder and 1/4 cup of sugar. I’d reduce these but overall great start!
