This was delicious! I used a medium sweet onion instead of shallots, and I added 3 cloves of garlic. Very hearty for a meatless meal. My family really enjoyed it, and I enjoyed the leftovers at work! Will make again.

Very good, very easy to follow recipe! This makes a good base which you can add to and experiment with. I added asparagus and chicken and it was very tasty!
