Ingredients

  • 8 ounces cooked white rice (cold)
  • 3 ounces peppers (chargrilled, coarsely chopped)
  • 8 eggs (beaten lightly)
  • 2 ounces goat cheese (crumbled, plus extra to garnish)

Directions

  1. Preheat broiler.
  2. Whisk together rice, peppers, eggs, crumbled goat cheese and 1/4 cup cold water in a large bowl. Season. Set aside.
  3. Lightly oil an 8 inch frying pan and place over low heat. Add frittata mixture to pan, cover loosely with foil and cook over low heat for 15 mins. Remove foil and sprinkle with extra goat cheese. Broil for 5 mins, or until just set and lightly browned. Let stand for 5 mins before serving.
